Bánh Xèo is a dish that varies greatly from city to city. In saigon it’s made with rice flour, coconut milk and turmeric. In Saigon there are 2 versions. One style is very big and cooked in a wok. The Edges are more dry than crispy. The other style is much smaller about 3 to 5 inches. These are cooked over an open fire, with a small cast iron pan. These are much crispier but more oily. These are both served to you with lots of vegetables for wrapping.
