Suon Cho Nuong – Grilled Dog Rib
When you get this dish you will be served a basket of leaves, a plate of Lemongrass, Chili, Galangal, Lime and a bowl of Mam Tom. Mix the Mam Tom with lots of sugar, lime and Sliced Lemongrass. A shot of rice wine is also normally mixed in. This sauce is pungent so season it aggressively.
Grab Some leaves add the meat and roll it up, watch out for bones, dip the wrap into the sauce. Take a nibble of the lemongass, chili, and galangal as your eating. Dog and Rice wine just go together.
